It was mostly heavy infantry. There wasn't a whole lot of agreement as to what specific weapons they were using. Bows, spears, swords, basically whatever they could find. The only reason they were called "Immortals" was because they had a constant number of units at all times, most of which were utterly disposable.
Yes, a Spartan could probably take an Immortal out. That's not an accomplishment.
