How do I get the right sounds for my own textures where do I set the sound for the texture?

You DO NOT edit that list. If you want a certain sound, just make a texture and give it the same as he original texture that has the sound you want.

Sorry, I'm sure if that will work, since Materials.txt goes by WAD. The problem with editing it is that if you want to upload your map, you'll have to add an edited materials.txt. And that's a mess...

ok never mind I'm just confused now. I'll wait untill someday my map works so I can find out what sound what texture makes.

The bottom line is: You can edit material.txt, but temporarily and not for uploading the map...
EDIT: Make a backup before messing with the file.
