Is there any reason to chose sky texture instead of Null when you build those part of the map that wont be seen by a player ?

Use null, not sky.

Only use sky where the sky will be seen by the player.

Using sky causes the engine to render the skybox in the distance. Also sky creates light you probably don't want to wait for in compilation. This is a waste of time if you're not trying to show sky anyway.

It's in the zhlt.wad that comes with the zhlt tools.
