Ok Hammer mapping is cool but I discovered something just as fun that I want to try out. Have you noticed the diffrent skins you can download for weapons, hostages, counters, terries and other cool stuff for Counter strike? Well I want to make my own skins for CS:S but I have no idea where to start so is there maybe someone that could help me with this?

Try the Valve Developer Wiki. It has tutorials on how to make models and how to retexture bits and bobs.

I can recolor but I don't know how to edit the gun.
